A comfort coffee: deep sweetness with caramel, milk chocolate and brown sugar, and a touch of citrus. Made for a clean pour-over. A mixed-variety lot of Bourbon, Pache, Caturra and Catuaí from smallholders in San Ignacio, Jaén and Cutervo, in Cajamarca, northern Peru. After pulping, the coffee ferments for 30 to 40 hours and the parchment dries slowly over 16 to 20 days, then every batch is floated and hand-sorted.
