Elegant and aromatic: bright, refined acidity, a velvety body and expressive berry and floral notes. From the village of Shantawene in Bensa, Sidama, Ethiopia, at 1,990 to 2,400 m. Produced by Daye Bensa, founded by brothers Asefa and Mulugeta Dukamo, from their own farm and neighbouring smallholders. Natural process: the cherries are dried whole in the sun.
